I have to say.. I’m not a very adventurous eater. I grew up in a very healthy household but one that would never have asian, middle eastern or even seafood on our table. So when I married my husband, a man who can’t get enough of every kind of food, I began to expand my pallet. As far as Thai goes, this was a good first start for me. It is very healthy and can be made in 30 minutes or less. Perfect combo for a weekday meal.
1 white onion, cut into strips
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 1/2 tbls of peanut oil or grapeseed oil
2-3 large cloves garlic, crushed and cut in slices
1 1/2 cups chopped basil leaves
1 1/2 lb. lean ground turkey
2 tbls of lime Juice
1 tbls fish sauce
2 tbls Sriracha
1 tbls soy sauce
1 tbls honey
Start with a medium size bowl and whisk together the fish sauce, Sriracha, soy sauce, lime juice and honey. Then put the bowl to the side. Next begin cutting the onions and red bell peppers into strips followed by peeling, slicing and crushing the garlic.
Heat your wok or large pan over high heat for about a minute before adding 1 tablespoon of peanut or grapeseed oil. Add in garlic cloves and cook 1-2 minutes. Once you smell the garlic aroma, add in the onion and bell pepper strips to your pan and cook for 1-2 minutes, then remove to a separate bowl.
Next you’ll add another tablespoons of oil and put in the ground turkey and cook for 5 minutes or until the meat is golden brown. Add back in your vegetables and begin stirring everything together. Cook together for a minute or so. Add in chopped basil and cook until the basil begins to wilt.
Pour in the sauce and stir until it covers the entire mixture. Cook for an additional 2 minutes and serve while hot.
